Mid Coul farm, situated near Inverness in the northern reaches of Scotland, played a pivotal role by providing our initial harvest of organic barley in 2003. This forward-thinking estate, covering 2,755 acres, has implemented an innovative closed-loop fertility system. This system not only generates electricity using an anaerobic digester but also facilitates the recycling of nearly all waste material into fertilizer.
With a commitment to avoiding artificial inputs, the barley at Mid Coul receives its nourishment from the ground itself, making it the purest embodiment of its terroir. This term encompasses the unique combination of soil composition, climate, and geographical location where the barley is cultivated.
In alignment with sustainable principles and a harmonious coexistence with nature, this eco-friendly spirit represents the future of whisky production and holds a significant place within our Barley Provenance series.
The resulting delicate floral spirit is matured in traditional American oak casks, imparting a delightful fusion of creamy vanilla, fudge, honeyed citrus, notes of ripe fruit, and subtle spices.
Tasting Note by Bruichladich:
Nose: Lemon rind, water mint, cantaloupe melon, creme brulee, and mellow oak.
Palate: The delicate floral spirit has a superb flavour profile of toasted oak, honey, vanilla fudge, ripe pear, and melon after maturing in traditional American oak.
Finish: Thick and rich. Golden syrup, coconut, and a sea breeze with nutmeg undertones.
