Starting as a Fino, Amontillado Sherry experiences further maturation without the 'flor' layer, resulting in a deeper hue and enhanced characteristics through oxidative aging. Matured in hogsheads that housed this aged Sherry, the resulting single malt features rich flavors of dark cherries, toasted hazelnuts, and caramel. The Wood Collection is introduced at 48% ABV, with its natural colour and without chill filtering, highlighting the distinctiveness of each spirit.
Tasting Note by GlenAllachie:
Nose: Soft orchard fruits, cinnamon and heather honey, with butterscotch, hazelnuts and dark tobacco.
Palate: Honeycomb, maraschino cherries and dried apricots, followed by poached pears, blood orange, mixed nuts and cinnamon.
