Fino, known for its light appearance and subtle flavour profile, represents the driest type of Sherry. It requires at least two years of biological ageing beneath a 'flor', a yeast layer that prevents oxidation. The maturation in ex-Fino hogshead casks results in a single malt rich with flavours of stewed pear, sugared almonds, and vanilla custard. The Wood Collection is introduced at a robust 48% ABV, in its natural colour and without chill filtration, showcasing the distinct character of each spirit.

Nose: Soft orchard fruits, cinnamon and heather honey, with butterscotch, hazelnuts and dark tobacco.
Palate:Dried apricots, honeycomb and butterscotch, followed by baking spices, marzipan and caramel, with orchard fruits and citrus on the finish.
