Bere barley, acknowledged as Britain's oldest cultivated cereal strain, would have been utilized by Scotland's early distillers over many centuries. Nevertheless, in the 20th century, there was a shift towards prioritizing yield and commercial viability, leading to the selection of varieties that offered easier cultivation and higher extract, favoring efficiency over flavor.
In their commitment to championing flavor, the distillery has been working closely with the University of the Highlands and Islands' Agronomy Institute since 2005 to reintroduce Bere barley into the production of single malt whisky. However, the importance of this barley extends beyond whisky production, as it holds significant potential for the future of food production.
Sown in April and harvested in September, the 2011 growing season primarily witnessed warm and dry conditions, except during the crucial harvest period when rainfall became more frequent. Maturing patiently for over a decade in first-fill ex-bourbon casks, the understated maturation of the 2012 vintage carefully balances an indulgent texture with the presence of malty, sweet fruit notes.
Tasting Note by Bruichladdich:Nose: Complex and alluring, there is a wonderful combination of fruity and floral notes on the nose. Oak comes through with zesty lime and green apple, followed by fragrant honeysuckle and creamy vanilla. The Bere barley provides a tart robustness with hints of hay and barley sugar sweetness, with a peach note growing as the dram opens further.Palate: Firm and well rounded, Bere barley and stoned fruit glide across the palate bringing waves of apricot, ripe peach and stewed apple. Chocolate lime hints at the zesty richness of the spirit before barley sugar and warm scones bring a remarkable depth of flavour from the malt. Marine notes of sun kissed sand and sea shells follow, moving to marzipan, mellow oak and coconut.Finish: Long and delicate, the finish has notes of gingerbread, milk chocolate, marzipan, creamy vanilla and apricot jam. A subtle marine note lingers along with a hint of barley sugar.

Its subtle aroma reveals hints of spice, complemented by savory notes alongside traces of toffee and fine oak shavings. The flowing texture carries a sweet caramel toffee flavor. True to the legend, it's a regal spirit of abundant richness.
Tasting Note by Cameronbridge:Nose: Subtly spiced cereal hints and sweetness entwine to suggest ripe tropical mango, papaya, and peapods. Rising through this, traces of hard toffee and light, sustained shavings of oak hint at the spicy intensity on the palate. A splash of water reveals notes of cinnamon bun and salted toffee. Later, these fade appealingly to scented beeswax.Palate: Silky and smooth-flowing in texture with an intense butterscotch-sweet taste, which mellows into rich caramel toffee. A balancing spicy-dry, oaky intensity appears mid-palate. Adding water softens the honeyed sweetness to creamy-smooth Swiss milk chocolate, with just a little salt mid-palate. Gentle spice now holds the sweetness in check.Finish: Short and quite intense, with considerable warming chili spice. With water sweeter, the spice reduced.

Champagne Pol Roger designed their Prestige Cuvée to honor Sir Winston Churchill, bearing in mind the attributes he valued in his champagne: sturdiness, a rich profile, and a measure of maturity. Pinot Noir takes the lead, delivering structure, depth, and strength, while Chardonnay adds a touch of grace, refinement, and delicacy. The grapes used are solely harvested from Grands Crus Pinot Noir and Chardonnay vineyards that existed during the time of Churchill. The Cuvée Sir Winston Churchill is crafted exclusively during outstanding vintages and consistently makes its debut after the other vintage-specified Champagnes from Pol Roger, reflecting Churchill's fondness for more mature wines.
Tasting Note by Pol Roger:The 21st vintage of the Cuvée Sir Winston Churchill is an alluring mid-yellow-gold with a fine stream of bubbles, both characteristics of the length of time this wine has spent in the famously cool Pol Roger cellars. The nose opens with notes of spices and pepper. A good intensity of black fruit follows, showing the fine concentration and density of the wine. The complexity is obvious: a bouquet of dried fruit and hazelnut overlayed with notes of exotic fruits. The aromas are particularly open and impressive. On the palate, candied fruit notes accompany hints of pastries, brioche and cocoa, broad and mouth-filling. Delightfully structured, the large proportion of Pinot Noir gives the roundness and gravity that one expects from this cuvée. Despite the wine’s relative youth, it is starting to show some smoky weight and good grip with broad, rich and long acidity. Full bodied and generous, the wine culminates with terrific length. Drink now or over the next 20 years.
