Founded in 1892 by William Grant in Dufftown, at the heart of Speyside, The Balvenie is one of Scotland's most craft-focused distilleries, maintaining its own floor maltings, cooperage and coppersmith team on site. DoubleWood 12 was launched in 1993, built on a wood finishing technique pioneered by David C. Stewart in 1982 that has since become widely adopted across the industry. The whisky first matures in traditional whisky oak casks, which impart warming vanilla and gentle spice, before being transferred to European oak Sherry casks for a further period of maturation that adds fruity, honeyed depth and greater complexity. The whiskies are then married for three to four months in large oak tuns to allow full integration before bottling. The Reserva PX represents one of the most intensely flavoured expressions in the Glencadam range, shaped decisively by the Pedro Ximénez Sherry butts sourced from Andalucía, Spain, in which it receives its final maturation. Produced at Glencadam's historic distillery in Brechin, Angus — in operation since 1825 — this small-batch release draws on single malt selected by the Master Distiller from the distillery's dunnage warehouses, where years of ex-bourbon maturation have laid a rich and fruited foundation for the PX cask to work upon.
Pedro Ximénez is among the most intensely sweet and concentrated of all sherry styles, and its influence here is profound — drawing out dark fruit, baking spice and confected richness that places this expression firmly at the indulgent end of the Glencadam spectrum. This whisky is a blend of 15% first-fill European oak sherry casks, 15% first-fill American oak sherry casks, and 70% premium hand-selected refill oak casks. Tasting Note by Smokehead:Palate: Thick peat then fruitier, creamier feel - soft rich oak, soothing custard and vanilla. The hit of oily black smoke, with a rich, heavy mouthcoating peaty feel. Then along comes a sweet sticky flavour if barbecued banana, tangy sultanas and dried fruits.Finish: The peat returns, just as you hoped. This time it's brought some authentic Spanish sherry oakiness with it, pleasingly and disturbingly sweet. And one last sharp salty reminder that you're not dealing with the ordinary here.
