The whisky first matures in traditional whisky oak casks, which impart warming vanilla and gentle spice, before being transferred to European oak Sherry casks for a further period of maturation that adds fruity, honeyed depth and greater complexity. The whiskies are then married for three to four months in large oak tuns to allow full integration before bottling.
