The project draws on a deeply personal piece of family history: Knowles-Carter's paternal great-grandfather, Davis Hogue, was a successful moonshiner in the American South during Prohibition, concealing bottles in the hollow knots of cedar trees on his farm for friends and family. Four generations on, SirDavis honours that legacy and gives it an expression worthy of the craft.
The liquid itself is a considered marriage of rye and malted barley, combining the bold, spicy character of rye with the softer, more rounded qualities of malt, before being finished in Pedro Ximénez Sherry casks that add a layer of dried fruit sweetness and depth. Dr. Lumsden, whose instinct for flavour balance is among the most decorated in the industry, spent years in research and blind tastings alongside Knowles-Carter to arrive at a profile designed to appeal equally to seasoned whisky drinkers and those newer to the category. Tasting Note by SirDavis: Nose: Tangy Seville oranges mingle with soft sun-kissed raisins, while sizzling spices of clove, cinnamon and ginger play with luxurious notes of Demerara sugar and toffee. In contrast to many distillery releases, which blend various cask types, this bottling stands out for its straightforward approach. Aged to perfection in a refill hogshead, it harks back to an era when floor maltings were commonplace at the North Speyside distillery, offering a nostalgic glimpse into its history.

The Glentauchers 12-Year-Old 2010, selected by Milroy's, is a single malt that was initially matured in a refill hogshead before being reracked into a first-fill Manzanilla hogshead for further aging. This whisky, distilled in 2010 and bottled in 2022, has an alcohol by volume (ABV) of 56.3%. This particular expression was limited to just 251 bottles, making it a rare and collectible release.

The whiskey matures in casks formerly used to hold Oloroso and Pedro Ximénez Sherry, infusing it with rich and complex flavors.
Tasting Note by Westland: Nose: The aroma of honey-dipped oatmeal raisin cookies and quick richness are there in the nostrils. A drizzle of maple syrup is then applied to banana pancakes.Palate: There are initially kiwi aromas along with more notes of maple and raisin syrup. Extended tastings start with a dizzying array of sweet pastries and cookies that gradually get richer and darker before giving the palate over to stewed yellow fruits at the finish.

The smouldering moss on the nose gradually transforms into burning embers and roasted plantains. As time passes, the palate also changes, moving towards more pronounced earth notes, green herbs, and increasing iodine towards the finish.
