Inspired by the desire to create a fruitier and sweeter iteration of Balvenie, Apprentice Malt Master Kelsey McKechnie embarked on a novel experiment. These barrels were then filled with Balvenie whisky previously aged in ex-bourbon barrels. To craft The Balvenie DoubleWood, David Stewart MBE begins with whisky aged for at least 12 years in traditional whisky containers, consisting of American Oak ex-bourbon barrels and hogsheads. This is subsequently transitioned to Spanish oak ex-Oloroso sherry casks, where it remains for an added nine months.
Following this, the whisky is shifted to large oak receptacles, known as "tuns", for a period spanning 3-4 months. This crucial step allows the distinct whiskies from separate casks to seamlessly "marry" together.

With a little drop of water, some more herbal notes appear, like fennel, coriander and lavender, along with some characteristic Ardbeg aromatic woodsmoke and a hint of fresh, salty sea spray.Palate: A distinctively peppery mouthfeel eases into a complex symphony of flavours; treacle toffee, aniseed, salted caramel chocolate, eucalyptus, menthol and briar wood, to name but a few.
