    Introduced in 1993, the DoubleWood 12 was birthed from a method pioneered by The Balvenie's Malt Master, David Stewart, in 1982—a technique now widely recognized as 'wood finishing'. To craft The Balvenie DoubleWood, David Stewart MBE begins with whisky aged for at least 12 years in traditional whisky containers, consisting of American Oak ex-bourbon barrels and hogsheads. This is subsequently transitioned to Spanish oak ex-Oloroso sherry casks, where it remains for an added nine months. Following this, the whisky is shifted to large oak receptacles, known as "tuns", for a period spanning 3-4 months. This crucial step allows the distinct whiskies from separate casks to seamlessly "marry" together. Owing its unique profile to maturation in dual wood types, The Balvenie DoubleWood single malt whisky imbibes varied attributes at each phase. time has brought abalance, a harmony in the combination of oak, smoke and spirit. While the smoke isalways discernible on the nose it is dry, earthy, peatash in its style and so allows the oakto come forward with waves of golden caramel, fudge, vanilla custard, hints of ginger,nutmeg and clove. There is citrus fruit, coaxed from the glass with a drop of water,gentle lemon meringue and clementine. Breathe deeply and the floral aromas of wildthyme, heather and sea pink bring you to this Atlantic coast.Palate: On the palate there is a noticeable delicacy and softness in texture and style.Again, the balance of flavour is superb as the smoke wraps loosely around thesweetness drawn from deep within the oak. Adding a unique twist to this release, Billy blended four exceptional wine cask finishes to create a distinctive expression: The Cuvée Wine Cask Finish. Drawing from the wine industry, the term 'Cuvée' typically refers to a blend that incorporates multiple grape varieties. Similarly, their 9-year-old Cuvée represents a harmonious marriage of spirits from several esteemed wine casks sourced from renowned regions like Bordeaux, Languedoc, and Valpolicella. Billy meticulously monitored the character development of each individual barrique, skillfully blending the whiskies together. The resulting golden liquid reveals notes of elegant stone fruits, hints of toasted almonds, and a lively touch of zesty orange peel on the palate. This limited expression is bottled without chill-filtration to preserve its flavor and retains its natural color, boasting an ABV of 48%. Handling Scottish oak proves challenging throughout the entire production process, from growth and milling to coopering. Due to its rarity, costliness, and tendency to form knots, it is an infrequently chosen wood for whisky maturation. Before being filled with whisky, the wood underwent an extensive 36-month air-drying period, followed by a medium-level toasting and charring process. Despite the inherent difficulties, this coveted oak variety imparts luxurious notes of blonde chocolate, accompanied by hints of zesty orange and velvety toffee, resulting in a truly distinctive and indulgent drinking experience.
